Eligibility Requirements Before Applying

Before enrolling in the Hygiene Rating Scheme, your Food Business Operator (FBO) must meet the following requirements.

1. Valid FSSAI Licence or Registration

The establishment must possess a valid State or Central FSSAI Licence/Registration with updated business details and production capacity.

2. Food Safety Supervisor (FoSTaC Certified)

The business must appoint at least one trained Food Safety Supervisor (FSS) for every 25 food handlers. The supervisor should hold a valid FoSTaC Training Certificate.

3. Food Safety Display Boards (FSDB)

Mandatory Food Safety Display Boards must be installed in customer-facing areas as well as food preparation and kitchen areas.

4. Laboratory Test Reports

The business should maintain recent:

  • Water Potability Test Reports
  • Food Testing Reports (where applicable)

These reports must be issued by an FSSAI-notified or NABL-accredited laboratory.

The Hygiene Rating Scheme follows a simple six-step process:

  1. The Food Business Operator (FBO) selects an empanelled Hygiene Rating Audit Agency and schedules the audit.
  2. The Audit Agency assigns a qualified auditor through the Hygiene Rating portal.
  3. The auditor visits the premises and evaluates compliance against the Hygiene Rating Scheme requirements.
  4. The auditor submits the audit report to the Hygiene Rating Agency.
  5. The report is reviewed and approved.
  6. Once approved, the FBO can download the Verified Hygiene Rating Certificate and display it at the establishment.
